Q. When I bake chocolate chip cookies they seem to get tiny little bubbles and come out with a cake like texture and appearance.
A. My first impression is that you have too much liquid in the cookie dough mix. The only liquids found in a typical chocolate chip cookie recipe are eggs. For a standard batch of cookies (about 3 dozen) you would not want any more than two eggs in your recipe. Any more than that would give you a fluffier cake like cookie. Adding any liquids like milk or water would as well. Some chocolate chip cookies are created to produce a cake like cookie.
Eggs are emulsifiers that lift and stabilize the cookie, so the more eggs you have the fluffier your cookie will be.
If you are using no more than two eggs, than I would try upping the flour content in your recipe. Start by adding another 1/4 cup and see if that helps. If the recipe calls for liquids other then eggs, you could try eliminating those as well.
One more thing that comes to mind is the kind of fat you are using in your recipe. Are you using a margarine? Many margarine brands have high water content. Although I do not recommend using margarine of any kind in baking, make sure that you are using a margarine that has at least 80% solid fats in them.
Try this best chocolate chip cookie and you should be happy with your results!
