Vegan Chocolate Chip Cookie Recipe

A vegan chocolate chip cookie recipe by definition would be a recipe that excludes eggs, dairy products and any other ingredient resulting from animals. This recipe uses a grade B maple syrup to sweeten the cookie, as animal products are used in the refining process of regular sugar. It is mostly used as table syrup, however, the strong maple and caramel flavoring in it make it ideal for richly flavored chocolate chip cookies, and it is quite often used in baking. The really great thing about using a vegan recipe is that being egg free you have no worries about salmonella and can freely eat the raw dough without worry!

Vegan Chocolate Chip Cookie Recipe

Ingredients

  • 3/4 c. Applesauce
  • 2 tbsp. Organic canola oil
  • 3/4 c. Grade B maple syrup
  • 1 tsp. Vanilla
  • 1 tsp. Cinnamon (optional)
  • 1/2 tsp. Salt
  • 2 c. All-purpose flour or whole wheat flour
  • 1/4 c. Instant oats
  • 1 ½ tsp Baking Powder
  • 1 package Vegan chocolate chips or Vegan carob chips
  • 1/2 c. Nuts (optional)

Directions

1.) Preheat the oven to 350° F.

2.) In a separate bowl sift salt, cinnamon, flour, and baking powder. Add oats, and set to the side.

3.) Cream oil, vanilla, applesauce, and maple syrup together.

4.) In small increments, add the bowl of dry ingredients allowing a few seconds mixing time between each pour. Mix until just blended and turn off mixer.

5.) Stir in chocolate chips and nuts.

6.) Scoop rounded tablespoons of dough onto an ungreased or parchment lined cookie sheet.

7.) Bake for 8-10 minutes, until the edges of the cookies are golden. Let cookies sit on cookie sheet 2-3 minutes before removing.

Makes two dozen cookies.
