Many commercial bakeries use starches in their recipes to achieve a chewy soft texture that will hold. The vanilla pudding does just that making this cookie almost cake like in texture but still maintain the cookie like qualities you seek. These chocolate chip pudding cookies have been said to be akin to the Soft Batch Chips Ahoy® cookies you can buy on the grocer's shelf. You can alter the flavor of this cookie by using different flavors of puddings and chips. This is a fun one to play with!

Soft Chocolate Chip Cookie

INGREDIENTS:

  • 1 cup butter, softened
  • 3/4 cup packed brown sugar
  • 1 (3.5 ounce) package instant vanilla pudding mix
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ tsp salt
  • 2 cups semisweet chocolate chips

DIRECTIONS:

1.) Preheat oven to 375° F

2.) Mix flour, soda, salt in separate bowl. Set to the side.

3.) Cream butter and brown sugar.

4.) Add vanilla, pudding, and eggs.

5.) Mix in dry ingredients until blended.

6.) Stir in chips.

7.) Drop rounded tablespoons of dough onto parchment lined or ungreased cookie sheet.

8.) Bake for 9-10 minutes or until edges of cookies are brown.

9.) Let cookies sit on sheet for 1-2 minutes before moving to wire rack.
