- Cookie Sheets: A good quality cookie sheet is a must. I am partial to 10" X 15" aluminum jelly roll pans with easy to grip edges. However, air bake, stones, and stainless steel cookie sheets will all work fine.

- Plastic or Metal Spatula: This will be used to slide the cookie off the cookie sheet: the bigger the spatula, the better.
