Vanishing Oatmeal Raisin Cookies

is a good one to use if you are also interested in a chewy oatmeal cookie recipe.
Oatmeal chocolate chip cookies are as delicious as a classic chocolate chip cookie
but with the added bonus of whole grains. An oatmeal cookie is great as a stand
alone cookie but is also quite versatile. Add dried fruit or raisins to make
it an oatmeal raisin cookie recipe or your favorite chocolate chips to make it
a chocolate chip oatmeal cookie recipe.
You can use old fashioned rolled oats for a chewy oatmeal cookie, or quick cook
oats for a more tender oatmeal cookie that will have a consistent texture throughout.

Quaker Oats Oatmeal Cookies
Ingredients:
- 1 C (2 sticks) butter or margarine, softened
- 1 C firmly Packed Brown Sugar
- 1/2 C Granulated Sugar

- 2 Eggs
- 1 tsp Vanilla
- 1 1/2 C All-Purpose Flour
- 1 Tsp Baking Soda
- 1 Tsp Cinnamon
- 1/2 Tsp Salt (optional)
- 3 Cups Quaker Oats (Quick or Old Fashioned, uncooked)
- 1 Cup Raisins
Directions:
- Heat oven to 350 degrees F.
- Beat together margarine and sugars until creamy.
- Add eggs, and vanilla; beat well.
- Add combined flour, baking soda, cinnamon and salt; mix well.
- Stir in oats and raisins; mix well.
- Drop by rounded tablespoonfuls onto ungreased cookie sheet.
- Bake 10-12 minutes or until golden brown.
- Cool 1 minute on cookie sheet; remove to wire rack.
Yields about 4 dozen
Bar Cookies: Bake 30-35 minutes in ungreased 13X9 inch metal baking pan.
